I know what you’re thinking. Another taco recipe? Yes. But hear me out!
This one is just too easy not to share. And I’ll be honest, friends, calling it a “recipe” almost feels like cheating. But sometimes the simplest meals are the ones worth sharing, especially when they’re this delicious, versatile, and perfect for making in bulk if meal prep is your thing.
We’re talking ground beef (or chicken or turkey!), a can of black beans, some red bell peppers, an onion, and a packet of Siete taco seasoning. That’s it. Seriously.
Pile it into soft tortillas, stuff it into crunchy taco shells (my personal favorite because, well, gotta have that crunch!), or spoon it over some roasted sweet potatoes for an easy, satisfying bowl.
Load it up with your favorite taco toppings, and dinner is done. And if you made a big batch? Even better. You've got the makings of a few more easy meals throughout the week.
Simple ingredients, endless possibilities, and very little effort. My kind of cooking!
What You’ll Need
1 lb ground beef (or turkey or chicken — you do you!)
1 red bell pepper, sliced
1 sweet onion, chopped
1 can black beans, drained and rinsed (these are my fave!)
1 packet taco seasoning (Siete is the BEST!)
Avocado oil, for sautéing
½ cup water
What You’ll Do
Heat a drizzle of avocado oil in a large sauté pan over medium heat. Add the chopped onion and cook for 2–3 minutes, until it starts to soften.
Toss in the sliced red pepper and continue cooking for another 8–10 minutes, stirring occasionally, until the veggies are nice and soft.
Add your ground meat to the pan, breaking it up into crumbles as it cooks. Keep stirring until the meat is fully cooked through and no pink remains. If there's a lot of excess grease, go ahead and drain it off.
Drain and rinse your black beans, then add them to the pan. Give everything a good stir to combine.
Pour in ½ cup of water and sprinkle in your taco seasoning. Stir until everything is evenly coated. At this point, things should look a little too saucy to serve — that's exactly what you want! Let it simmer for a few more minutes, stirring occasionally, until most of the liquid has evaporated and you're left with a perfectly seasoned mixture that'll hold its own in a taco.
Warm up your taco delivery method of choice (soft, crunchy, or skip the shell altogether!), pile on that delicious filling, and finish with all your favorite toppings.
And just like that, dinner is served!
A Little Meal Prep Tip
This is one of my favorite recipes to double (or triple!) because it's just as easy to make a big batch as it is a small one. Store the filling in the fridge for up to 3–4 days, and you've got a head start on tacos, burrito bowls, taco salads, or my personal favorite — a big scoop over roasted sweet potatoes. A little effort now, a whole lot of easy meals later!
